The Coatings

Because the melted marshmallow firms up quickly, work efficiently and reheat the mixture briefly in the microwave if it starts to set. After dipping, chill the berries for a short time so the marshmallow layer stabilizes.

Next comes the chocolate. Use dark chocolate melting wafers or another melting chocolate of your choice and heat until smooth. Dip the chilled, marshmallow-coated strawberries about two-thirds of the way into the chocolate, letting any excess drip off. While the chocolate is still soft, press or sprinkle on a generous layer of graham cracker crumbs to capture that unmistakable s’mores crunch.

Ingredients

  • 8-10 large fresh strawberries, washed and patted dry
  • 3 cups miniature marshmallows
  • cups dark chocolate melting wafers such as Ghirardelli brand
  • 1/2 cup graham cracker crumbs

Instructions

  • Line a rimmed baking sheet with parchment paper and lightly grease the paper with cooking spray. Set aside.
  • Place the miniature marshmallows in a medium microwave-safe bowl. Microwave on HIGH for 30 seconds; they should puff up. Stir until smooth and gooey. Working quickly, dip each strawberry about three-quarters of the way into the marshmallow mixture. If the mixture begins to set, heat for an additional 5 seconds. After dipping, refrigerate the strawberries for about 10 minutes so the marshmallow layer firms up.
  • Melt the dark chocolate wafers according to package instructions or until smooth. Dip each chilled, marshmallow-coated strawberry about two-thirds of the way into the melted chocolate, letting excess chocolate drip off. Place back on the parchment-lined sheet and immediately sprinkle with graham cracker crumbs while the chocolate is still wet. Allow the chocolate to fully harden before serving.

Notes

Make the marshmallow coating in smaller batches if preparing many strawberries, as the marshmallow sets quickly and is easiest to work with when warm and pliable.
