Pumpkin is incredibly versatile and deserves to be used in both sweet and savory dishes. This was my first time trying pumpkin fudge, and it was love at first bite. I wasn’t sure how it would turn out, but it was surprisingly easy to make — and so tasty that I snuck two pieces while taking photos.
Quick confession: I still have a few pieces in the freezer. *snack break*

Pumpkin and chocolate fudge is perfect when you want something healthy and quick!
The pumpkin snack your fridge was missing
I’m pretty sure this is exactly what your fridge needs. If you like quick, healthy treats, this pumpkin fudge will become a favorite. It takes about five minutes to prepare (plus chilling time) and uses only four main ingredients plus a pinch of salt. Chances are you’ll read this faster than it takes to make the fudge.
One important note: finely milled coconut flour is essential here. It gives a unique, delicate flavor and texture. Substituting other flours may result in a gritty or overly dry outcome, so stick with the recommended coconut flour when possible.

PUMPKIN & CHOCOLATE FUDGE

Ingredients
- 150 g Pumpkin purée (cooked and drained)
- 70 g Almond butter
- a pinch Sea salt
- 25 g Fine coconut flour (not shredded coconut)
- Optional: sweetener of choice (honey, maple, or a sugar-free option)
- 40 g Dark chocolate (for topping)
Instructions

Line a small loaf pan (about 8 x 15 cm) with parchment paper.

In a bowl, combine the pumpkin purée, almond butter, a pinch of salt, and the coconut flour. Add your chosen sweetener if you prefer a sweeter fudge.

The mixture should be neither too runny nor rock hard. If it seems loose, add a bit more coconut flour until it holds together.

Press the mixture firmly into the lined pan and chill in the refrigerator for at least 10–30 minutes to firm up.

Meanwhile, melt the dark chocolate and let it cool slightly. Pour the chocolate over the chilled fudge layer. Finish with a light sprinkle of flaky sea salt if desired.

Return to the fridge until the chocolate sets. Cut into small squares when ready to serve.
Notes
Variations: swap almond butter for peanut or cashew butter; try different chocolate varieties or add warming spices like cinnamon or a touch of nutmeg for extra pumpkin flavor.
