Ingredients

  • 1 1/2 cups pumpkin seeds
  • 4 slices applewood smoked bacon, chopped
  • 1/2 cup bourbon
  • 1 1/2 tbsp light brown sugar, divided
  • 1 1/2 tsp salt, divided

Instructions

  1. Rinse the pumpkin seeds thoroughly to remove all pulp and strings. Drain and pat them dry with a clean towel or paper towels.
  2. In a small saucepan over medium-high heat, cook the chopped bacon until it is crisp. Remove the bacon with a slotted spoon and drain on paper towels, leaving the bacon fat in the pan.
  3. Reduce the heat to medium-low and add the bourbon, pumpkin seeds, 1 tablespoon of brown sugar, and 1 teaspoon of salt to the pan with the bacon fat.
  4. Simmer gently, stirring occasionally, until most of the alcohol has cooked off and the seeds are coated, about 10–15 minutes. Watch carefully so the seeds don’t burn.
  5. Preheat the oven to 275°F (135°C).
  6. Spread the coated seeds in a single layer on a baking sheet lined with parchment paper.
  7. Bake for 60 minutes, stirring once halfway through baking to promote even browning and crisping.
  8. Remove the seeds from the oven and immediately sprinkle with the remaining 1/4 teaspoon salt and 1/2 tablespoon brown sugar. Allow them to cool slightly, then toss with the cooked bacon pieces.
  9. Once completely cool, store the seeds in an airtight container. They keep best for up to 3 days, although they rarely last that long!
