    or any similar crusty bread

Instructions

  1. Prepare the halloumi: slice the block into six pieces about 0.5 inches (≈1 cm) thick—there may be some halloumi left over. Heat a non-stick skillet over medium-high heat until hot. Grill the halloumi slices about 1 minute per side, or until they develop a golden-brown crust. Remove from the pan and let cool slightly, then cut each slice into three pieces for easier topping.

  2. Toast the bread slices to your preferred level of crispness. While the bread is toasting, mash the avocado in a small bowl and season with salt and pepper to taste.

  3. Assemble the tartines: spread roughly 1 heaping tablespoon of mashed avocado on each slice of toast. Arrange pieces of grilled halloumi on top, then finish with a drizzle of pomegranate molasses. Serve immediately while the halloumi is warm.

Pomegranate molasses is a concentrated tart-sweet syrup that adds a bright finish to these tartines. If you don’t have it on hand, you can reduce pomegranate juice on the stove until syrupy to make a homemade version.
