Holy Guacamole Deviled Eggs
These deviled eggs combine the creamy richness of avocado with classic deviled egg texture. The lime juice keeps the avocado bright and prevents browning, while garlic and onion powder add depth. A final dusting of smoked paprika gives a subtle smoky warmth, and crumbled bacon adds crunch and savory balance. They make a satisfying low-carb snack or a standout appetizer for parties and potlucks.
Ingredients
- 6 hard-boiled eggs peeled and cut lengthwise
- 1 ripe avocado pitted and peeled
- 1 T. fresh lime juice
- 1/4 tsp. salt
- 1/4 tsp. onion powder
- 1 tsp. minced garlic
- 2 tsp. finely chopped cilantro
- 2 sliced bacon cooked and crumbled
- smoked paprika for sprinkling
Instructions
-
Remove the yolks from the halved hard-boiled eggs and place them in a small bowl. Add the ripe avocado, fresh lime juice, salt, onion powder, minced garlic, and chopped cilantro.
-
Use a fork to mash the mixture until smooth and well combined. For a cleaner presentation, transfer the avocado-yolk mixture to a piping bag or a resealable plastic bag with the corner snipped off, then pipe it into the egg whites. Alternatively, spoon the mixture into each egg half.
-
Sprinkle each filled egg with smoked paprika and top with crumbled bacon. Chill the deviled eggs in an airtight container in the refrigerator for up to two days. Serve cold.
Notes & Tips
- Choose a perfectly ripe avocado that yields slightly to gentle pressure for the creamiest filling.
- To keep guacamole filling from discoloring, add the lime juice and store the eggs tightly covered until serving.
- If you prefer a smoother filling, briefly pulse the mixture in a food processor, then transfer to a piping bag.
- For crisp bacon, bake slices on a rimmed sheet pan at moderate heat and drain on paper towels before crumbling.
Variations
This guacamole deviled egg is versatile. Add a dash of hot sauce or a pinch of cayenne for heat, swap cilantro for chives if you prefer a milder herb flavor, or fold in a spoonful of sour cream or Greek yogurt for extra creaminess. You can also top with diced cherry tomatoes or pickled jalapeño slices for a bright contrast.
Serving & Storage
Serve these deviled eggs chilled as an appetizer, snack, or part of a brunch spread. They hold well in a single layer in an airtight container in the refrigerator for up to two days; after that, the avocado may begin to brown and the texture will change. Prepare the components ahead of time—hard-boiled eggs and crumbled bacon—and assemble shortly before serving for best appearance.
