This recipe likely began as a promotional or home-style favorite decades ago, but it endures because of its straightforward flavors and ease of preparation. You brown a pound of lean ground beef with onion and celery, add garlic and celery leaves, then stir in undiluted cream of mushroom soup, a splash of milk and Worcestershire sauce, and a touch of seasoning. The meat mixture gets folded into torn pieces of hollowed French bread, topped with generous shredded cheese, and baked until hot and bubbly.

Cheesy Beef Stuffed French Bread

Yield: 4 – 6 servings

Ingredients

  • 1 loaf French bread (about 1 lb; a little less is fine)
  • 1 lb lean ground beef
  • 1/2 regular-sized onion, chopped small
  • 1 rib celery, thinly sliced or chopped (about 1/2 cup)
  • 1 small clove garlic, finely chopped
  • 1/2 tablespoon chopped celery leaves
  • 1 can cream of mushroom soup (undiluted)
  • 2 tablespoons milk
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon celery salt, or to taste
  • 1/4 teaspoon coarse ground black pepper, or to taste
  • 1/4 teaspoon Cajun seasoning (optional)
  • 1 (8 oz) bag (about 2 cups) shredded Mexican blend or cheddar cheese, divided

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Slice the French bread lengthwise into two equal halves. Hollow out each half, leaving a shell about 1″ thick. Tear the removed bread into small chunks and place them in a large bowl. Place the two bread halves on a baking sheet (line with foil if you prefer).
  3. In a large skillet over medium-high heat, brown the ground beef with the chopped onion and celery until cooked through. Drain any excess grease.
  4. Add the garlic and chopped celery leaves to the skillet and sauté for about 2 more minutes.
  5. Stir in the undiluted cream of mushroom soup, milk, and Worcestershire sauce. Season with celery salt, black pepper, and Cajun seasoning if using. Cook until heated through, about 3–4 minutes. Fold in 1/2 cup of the shredded cheese.
  6. Add the warm beef mixture to the bowl with the torn bread pieces. Stir and fold until the bread soaks up the meat mixture and everything is combined.
  7. Pack the mixture into the bottom half of the hollowed French bread, spreading it evenly. Top the filling with the remaining shredded cheese and place the top half of the bread over the filling.
  8. Bake for 20–25 minutes, or until the cheese is fully melted and the filling is hot. If the loaf is sealed completely in foil, baking may take 25–30 minutes.
  9. Remove from the oven and let rest for 5 minutes before slicing. Slice on the bias and serve warm.
  10. To serve as appetizers, cut into 2″ slices for party-style finger sandwiches.

Notes

If you prefer a crisp exterior, bake the filled loaf directly on the baking sheet without foil. For a lightly crisp crust, place the loaf on foil and gather the foil around it loosely. To keep the bread softer, seal the foil tightly so steam remains inside. Adjust cheese types to taste—sharp cheddar, mozzarella, provolone, pepper jack, or a Mexican blend all work well.
